Healthy Blueberry and Almond Muffins | Darren – Kent-Teach

Try this recipe for yummy blueberry and almond muffins from Chef Madeleine Shaw; they are the perfect treat to cheer you up in January. The blueberries are rich in antioxidants which are great for your skin and almonds are rich in nutrients which are important for brain health. What’s not to like!
Ingredients
100g coconut sugar or honey
70g coconut oil or butter
4 eggs
300g spelt flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp cinnamon
1 orange
1/2 tsp vanilla extract
200g frozen blueberries
50g flaked almonds
